Oven Temperature and Door Seal Problems: Causes and Fixes

Food that cooks unevenly or too slowly often points to the thermostat, an element or a worn door seal. Here is how to tell.

An oven that does not hold its temperature is frustrating. Baking fails, roasts take too long and you may start doubting your recipes. In many cases the oven is the problem, and the cause is often the thermostat, a heating element or the door seal.

Signs of an oven problem

  • Food browns unevenly or burns on one side
  • Cooking takes much longer than the recipe says
  • The oven seems far hotter than the dial
  • The oven will not reach temperature
  • Heat escapes around the door, or the door area feels very hot
  • The oven switches off too soon or stays on too long

Likely causes

Thermostat or temperature sensor

If the sensor reads incorrectly, the oven overheats or under-heats. The dial and the real temperature can differ noticeably.

Heating element

A weak or partly failed bake or grill element gives uneven or low heat.

Fan in fan-assisted ovens

A fan that is slow or stopped causes uneven temperatures.

Door seal

A worn, torn or hardened seal lets heat out. The oven works harder, heats slowly and cooks unevenly. The door and surrounding area may get unusually hot.

Door hinges or door glass

A door that does not close tightly because of worn hinges or a loose frame also leaks heat.

Control board or selector

In electronic ovens, a faulty board can produce wrong temperatures or error codes.

Safe checks

  1. Check the seal when the oven is cool. Look for gaps, tears, flattening or burned patches.
  2. Close the door on a strip of paper and see if it pulls out freely at different points.
  3. Check the door closes fully and is not obstructed.
  4. Use an oven thermometer placed in the centre to compare the real temperature with the dial.
  5. Check the fan, if fitted, by listening when the oven is on.
  6. Check trays and racks are correctly positioned and not blocking airflow.

What not to do

Repair

Door seals can often be replaced, and thermostats, sensors, elements and fans can be tested and replaced where parts are available. A technician can tell you which part is at fault and whether the repair is worthwhile for the age of the oven. See electric stove repair.

Prevention

  • Wipe the seal gently and avoid harsh scrubbing.
  • Do not slam the door.
  • Use the self-clean function sparingly, as the manual advises.
  • Keep the oven cavity free of heavy spills.

Frequently asked questions

Why is my oven hotter than the dial says?

The thermostat or sensor may be out of calibration or faulty. An oven thermometer helps confirm it.

Can a bad door seal change cooking results?

Yes. Escaping heat leads to slow, uneven cooking.

Is it safe to use an oven with a damaged seal?

A minor gap is usually not dangerous, but it wastes heat. Damaged glass or a loose door should not be used.

Is the oven fan supposed to run all the time?

In fan-assisted models it runs while cooking and sometimes after. Persistent noise or a stopped fan needs attention.
